I haven’t always been the biggest fan of pork chops, but we recently found a local farm stand that sells free range and “happy” pork and O.M.G! These pork chops were absolutely incredibly tender and just melted in the mouth!

I chose to cook them using a garlic and honey butter sauce but to be honest, these chops would have shone even with just a little seasoning and nothing else.

On the side I prepared some simple boiled potatoes and a summery salad with a variety of cheeses, veggies, and fruit. Side note: who else absolutely LOVES fruit in their salads?

  • Pork chops (with honey and garlic sauce): ~10g sugar per chop
  • Potatoes (per about 10 pieces):~20g carbs
  • Salad (per two or three hearty scoops): ~15 carbs (significantly less if you omit the fruit)

Total: ~45g carbs
