I love eggs benny!
Although I’m usually the type to go for the simplest breakfast option (and coffee, always coffee!), I recently woke up inspired to make something special. Because I hadn’t prepared for making bennys, I had to use the ingredients that I already had lying around the house. The result was eggs benny two ways, one with sliced ham and the other with spicy pork sausages. I pan fried some potatoes with some light seasoning (salt, pepper, and thyme) and cut up a bit of fruit and (overly ripe) avocado to put on the side.

- Half an orange: 10g carbs
- Potatoes (about 10-15 pieces):~25g carbs
Total: ~63g carbs
